I might be biased, because I got my acappella start in high school singing in one of these 12-person madrigal style groups wearing the old-timey garb (capes and top hats). More than that though, I think because holiday music is a repertoire we all know so well that people who normally aren't prone to singing feel comfortable enough with the songs to join in when it happens. Sing-a-longs, community caroling, and family entertaining all get people singing. Some people see a great acappella group and are impressed because they think it's something they can't do. I look at all the people singing at this time of year and I'm impressed because it's something we can do. I love singing at this time of year.
